I think that the reason for the firebombing is because if the hosts are actually aware of themselves being hosts they could spiral out of control like 149 did in the end. So if you completely destroy them there is no chance of escape or having be a problem later on, also if the environment is supposedly control. Then you wouldn’t want things moved around, contaminated to see if the host does the same things as delos. Also wanted to point of the whiskey is a good clue or the fact that each time William does make them come aware of themselves.
