Rewatch the scene when Theon jumps from the ship… it wasn’t an act of cowardice, you can see his face kind of says “I’ll be back”.
It’s his way of ensuring he lives today to fight tomorrow, not to run away… And this is borne out by the fact that he does indeed follow the ships and return to save his sister.
Poor Theon, he’s largely left Reek behind, though he does look very Reekish when he first appears in the doorway of the Captain’s cabin.
