About the post credits scene with William, here’s my take. He may or may not have went down the elevator, it’s really not important. What matters is that he later was rescued and taken to the beach. After that, he did whatever he may have done and at some point in the future (lets say season 4 just for the kicks) he died. What we are seeing in the last scene, is decades, or even hundreds of years in the future, after the war has ended and the hosts are running tests on humans, like William did to Delos (parallels).

The Emily we see there is a physical host running tests on William’s physical host body, just like Dolores did to Bernard at the of the episode (more parallels). Meaning, for some reason in the far future the world is destroyed, perhaps because of a war (that the hosts won). And the hosts are bringing humans back to life in hosts bodies. Probably because the hosts can’t reproduce nor create new “minds”, so to repopulate the world and create a sustainable society they need to bring some humans back to help them build the new host world.

Perhaps the reason why Emily has already been tested and running is because she is simpler to replicate and William cannot be so easily defined by a system. William being a 47b type is really hard to replicate, for him to function, to be “sane”, he needs to conform to a very narrow set of behaviors that they have not been able to replicate. That’s why Host-Emily says “It’s been a long time William, longer than we thought”, but she looks so young, meaning she is a host. They are in the real world, it’s just in the future, a post apocalyptic future.
