The data chip that shows the history of William in the park has a scene from season 1 where the Man in Black drags Delores into the barn. How can that be on the profile card if the suicide happened a year before that event?
Also, why do you say the hosts are woke instead of awake?

Hi, Eugene! “Woke” is a bit different from “awake” in that it implies awareness of something to which others are ignorant or unaware. And it’s pretty safe to assume MiB has repeatedly tortured or raped Dolores over the years. We see in Season 1 that he’s done the “kill Teddy and drag Dolores to the barn” dance a few times.
Also, the scenes we see from profile card on Juliet’s tablet are third person viewpoints, not a subjective down-the-arm-to-a-fistful-of-blond-hair camera shot. If the scanner’s are in the hats, who’s recording William dragging Delores?
I think the hat scanners are just recording brain and biological activity. Any visuals would be from hosts or park cameras.
