Um, Actually….Unsullied Are Completely Emasculated

It’s made clear that the Unsullied are completely emasculated; which is to say that scrotum, testicles, and penis are completely removed. It’s not specifically stated this is what happens to Greyworm, but there’s no reason to believe anything different.

Now… to get to the nitty gritty as it were… if the testicles are removed, it’s still possible for men to get erections, they just can’t produce semen. Consequently, they could quite easily have intercourse, but since it’s explicitly obvious that Greyworm performs cunnilingus he’s unable to do that.

Also, to further correct you – he’s going to have no desire for sexual congress. However, that doesn’t mean that he wouldn’t want to please a partner, but it wouldn’t be a sexual pleasure for him.

Also, to further correct you, Theon Greyjoy was NOT castrated, which means the removal of testicles and penis. It is made perfectly clear that only his penis was removed, which is called a ‘Penectomy’. So he still has the desire, just not the ability.
