Love the show, and I wanted to pitch you my theory:

Both Ford and MiB are hosts. MiB was sent out configured to present as human (possibly a replica of William – but maybe just a mashup of William and Logan).

But he’s become aware of his own nature and is trying to get answers. Ford is also a host. He killed Arnold (and yes, Bernard is a replica of Arnold) and using West World as his cover, he has been slowly attempting to take control of humanity.

I believe Delos also has sights on leveraging hosts in the real world (see, Future World film) – but have no idea someone is playing their game better and grander than them. I think Arnold became aware that something was wrong and those hosts were capable of and possibly already becoming sentient. I think he realized he was too late to stop Ford who had by then quietly taken complete control of the park (see the plot of the iRobot film) and he had to figure out a plan to stop Ford without being detected since there was no way to directly alert anyone without Ford knowing. But somehow Ford did detect Arnold’s plan (of which this maze is some sort of mechanism) and killed him in whatever the event in the park was as part of the cover up.

But Arnold hid a trojan horse in the code, possibly a virtual version himself that doesn’t have a host body (see Person of Interest), and Ford has been trying to eradicate it ever since while continuing his takeover of the outside world as well as continuing to perfect his eventual mechanism for maintaining that control, which seems to involve religion. Also, I think the maze is about helping hosts capable of consciousness achieve it and maybe that allows them to gain freedom from Ford’s control so they can destroy the park (and more-so derail Ford’s plans).
